Banana Chai Bread
Okay, I haven't actually made this recipe, but it sounds really good, so I thought I'd save it here for posterity. I got it from the debt-proof living web site and it's kind of a pain to find.
If I ever make it, I'll tell you if it's any good...
Banana Chai Bread
1 3/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
3/4 cup white sugar
1/2 cup low fat cream cheese
2 eggs
3/4 cup mashed bananas
1/4 cup strong chai tea* (brewed double strength)
1/2 cup chopped walnuts (optional)
Preheat oven to 350F. In a medium bowl mix together flour, baking powder, and salt. In a separate bowl combine sugar, cream cheese and eggs. Beat by hand or with an electric mixer until light and fluffy. Add mashed bananas and chai to the cream cheese mixture. Stir until fully incorporated. Add flour mixture and mix until smooth. Pour mixture into a greased 9x5 inch loaf pan. Bake for 60 minutes, or until a knife inserted in the center comes out clean. Cool on rack. Remove from pan after 10 minutes. Serves 12. One serving contains 165 calories and 3 grams of fat and 31 carbs. Enjoy!
* Just in case you didn’t get gift of chai tea, it is available in most grocery stores with the coffee and tea.
